Coconut Ice Cream with Almond Chocolate Chips
What You Will Need?
1 can full-fat coconut milk
1/4 Teaspoon kosher salt
2 Teaspoon cornstarch
1/2 cup honey or agave nectar to sweeten the ice cream
1 1/2 Teaspoon vanilla essence or extract
Dark or white chocolate chips
Coarsely chopped raw almonds
First put the ice cream bowl into the freezer overnight. Take coconut milk can and shake it well because the coconut milk has a tendency to form two layers, one full fat coconut milk and second the watery layer. Pour 1 cup of coconut milk into a bowl and set it aside and then mix the remaining coconut milk, honey and kosher salt into a saucepan. Put it on to a medium heat for 2 to 3 minutes mixing all the ingredients.
Add the cornstarch into the remaining 1 cup of coconut milk, stir it properly and mix it with the base onto the heat and stir it for 8 to 10 minutes until the mixture thicken. Don’t let the mixture boil, and then add the vanilla extract while stirring it.
Remove the mixture from the heat and make it cool and pour it in a bowl and cover it and let it cool for 5 hours in the refrigerator. Then toss the base in the ice cream maker, adding chopped almonds and chocolate chips. When it starts thickened, put it again in freezer for few hours till the ice cream got the icy cool texture.
How to Do It without Ice Cream Maker:
If you don’t an ice maker then after taking down the hot base from the heat make it cool and refrigerate it for 30 minutes, take it out and beat it vigorously put back in to the freezer for another 30 minutes. Repeat this process until the ice cream is creamy and fully frozen.
